I love how in 5 minutes you can have the best panini with a good glass of wine or beer to feel like you are still on vacation. I personally get some cibatta bread cut it in half and freeze it for those nights that I running but still would like to enjoy a great meal!

Ingredients
1 (16-ounce) loaf ciabatta, cut in half horizontally
4 teaspoons basil pesto *
1 1/3 cups thinly sliced fresh mozzarella cheese
2 large plum tomato, thinly sliced
handful of baby greens
Cooking spray or butter
Preparation
Brush cut side of the bottom bread half with pesto.
Layer the top half with mozzarella, baby greens and tomato. Top with remaining bread half. Heat your panini press, spray with cooking spray, cook 4 minutes.
*my personal version of pesto for a panini is basil leaves plus garlic plus extra virgin olive oil all mixed in the food processor.
