Fabulous Tomato Sandwiches with Basil Mayonnaise!

I love the simplicity of this sandwich yet it is extremely tasteful and just brings a "je ne sais quoi" to any get together! The sandwiches are very easy to carry around making it a fabulous appetizer to take to somebody's house. So for mother's day if you are visiting your sister or just gathering together in your house, you can  start celebrating  with a cold white zinfandel (or rose champagne) and a delightful tomato sandwich with basil mayonnaise!.

Ingredients
4 large ripe tomatoes, cored
Kosher Salt & Freshly ground pepper, to taste
1 cup mayonnaise ( I do low fat mayonnaise)
1/3 cup finely chopped fresh basil
16 slices firm, sliced white sandwich bread, crusts trimmed

Preparation
Slice tomatoes crosswise into 1/2-inch-thick rounds.
Place tomatoes in paper towel and season with salt. let it stand for 20-30 minutes to exude juices. ( I not always do this and I promise you it still tastes yummi)
Pat moisture with paper towel and season with pepper.
Mix together the mayonnaise & basil.
Make 8 sandwiches using 2 slices of bread, 2 tbsp mayonnaise and half a tomatoes for each. ( I put double slices of tomatoes and it makes it much chunkier!

You can add some 1 tbsp lemon juice and 1 tbsp olive oil to the mayonnaise if you want a little more complex taste. I like it both ways (although usually tend to do it without olive oil and maybe just squeeze at the last minute some lemon).

You can do it up to 8 hs in advance, the secret is to wrap them with a moist paper towel (just put it under the water , squeeze excess water) and wrap sandwiches with it. This way the bread will not loose moist.

And voila! In literally 5 minutes you have an easy dish that will make you look like the Fabulous host you are!!!
