I am all about presentation when it comes to entertaining... and love the idea of finishing a fabulous New Year's dinner party with some sparkling ice cream! I actually serve some lemon sorbet for Christmas Eve with some sparkling candles and it was very nice touch! My only recommendation is set them all in a tray and then lighten the sparkling candles at the same time for a great entrance {if you have more than 5 have somebody help you...}!!
