Food: Hummus and Avocado Toasts with Roasted Tomatoes

How about some delicious and healthy appetizers? Not only for guests, I would totally do them for me and my husband, pair with some great wine for a Saturday night in...!!

Here is the recipe:

Hummus and Avocado Toasts with Roasted Tomatoes {Makes 6 – 8 party bites}

Ingredients:

* 6-8 slices of bread [gluten-free, whole wheat, etc.]
* 1/2 cup hummus [store bought or homemade]
* 1 avocado – halved, pitted and peeled
* 4 plum tomatoes, halved lengthwise, cores and seeds removed
* 2 tablespoons extra virgin olive oil
* 2 teaspoons balsamic vinegar
* salt + pepper to taste

Directions:
1. Preheat the oven to 450 degrees F.
2. Arrange the tomatoes on your baking sheet, cut sides up, in a single layer. Drizzle with olive oil and balsamic vinegar. Season with salt and pepper.
3. Roast for 25-30 minutes, until the tomatoes are beginning to caramelize

4.While the tomatoes roast, toast your bread. Using a cookie cutter or circular object, cut out 1-2 circles per toast, depending on how big the piece of bread is.

5. Spread ½-1 tablespoon of hummus on each circular toast.
6. In a bowl or plate, mash avocado with a fork, leaving large chunks.

7. Layer the mashed avocado over hummus, season with salt + pepper.

8. Top with a roasted [or fresh] tomato. Serve immediately.

I would like to wish you, first of all, the greatest year, since so many of your dreams are about to come true and I truly wish you the best, eventhough I do not know you in person; but I guess that when a person decides to share a bit of her life for years with total strangers, and those on the other side decide to follow those flashes willingly, effortlessly and eagerly we kind of become friends. I´m from Portugal, I do not post very often but I follow your blog daily, anticipating with excitment what the news are going to be this time, never disappointing and always revigorated and inspired. Secondly I’d like to thank you for letting a door open for us, so that we could appreciate through the years the way you’ve evolved into someone so inspiring, so creative, so meticulous, so spontaneous, but above all, so genuinely true to yourself. Thank you, for I have also grown with you. I’ll keep on coming here, visiting you, hoping that if you come to my country one day, I’ll have the pleasure of welcoming you personally, opening then the doors of my house to you and hoping that you’ll feel at ease, just like I do, everytime I come to your blog. Cheers to you doll! Keep on being very Happy! and i hope that one day you may have time to visit my blog - it would be an honor!

It's only been recently that I've started roasting tomatoes and I have found they are so versatile! I use them in sandwiches like you have but also in pasta, salads, mixed in with quinoa and also on pizza. So delicious!

Holy God, I want to make this right now. Tomorrow, I will...perhaps with the Ezekiel wraps I have in the fridge instead of bread (which I don't have).
